Strawberry Drop Scones

(AKA Biscones, Fluffy Strawberry Biscuit-Scone hybrid made with Bisquick baking mix)

Shopping List and Ingredients

1 1/2 cups Bisquick Original Mix
3 tbsp granulated sugar
1/2 stick (4tbs) cubed and cold butter, we love Kerrygold Butter

1 1/2 tsp fresh lemon zest
1/2 cup diced fresh strawberries, dusted in flour
large egg (You likely can swap an egg for 1/4c of plain whole greek yogurt or 1/4c applesauce)
3 tbsp milk of choice, we use Fairlife whole or Fairlife 2%
1/2 tsp pure vanilla extract
Turbinado sugar or extra granulated sugar for "dusting"

Optional (but non-negotiable, really...) Glaze

1 1/2 tsp fresh lemon juice
1/2 tsp cold water
1/2 cup powdered sugar

Let's Make it!

Preheat oven to 375ºF
Mix the Bisquick, sugar, and butter in an electric mixer. If you don't have an electric mixer, grate the butter with a box grater and stir to combine.
Add egg, milk and vanilla into the mixture until just combined.
Fold the zest and flour-coated strawberries into the mixture. Do not over mix so the biscones light.


Place parchment paper on a cookie sheet. Do not skip this step.

Drop dough into 8 large scones down the length of the pan, 3, 2, 3.

Pixie Dust those babies with turbinado sugar or granulated sugar. It just makes them sparkle and have extra texture. Try to keep granulated sugar if using on the dough and not so much on the pan to avoid burning.
Bake for about 10 minutes until edges are light brown.
You may need to quickly rotate in your oven around 5-6 minutes, I did.
Cool for 5 minutes by pulling the parchment sheet onto a wire rack in one "swoop" so the bottoms stay golden.
Pro-Tip: Use a small snack-size ziplock bag to put glaze in and snip the tip of one of the bottom corners.
Drizzle the glaze over the warm scones while on the parchment and allow to set another 5 minutes.
Plate and serve! I really love my 6-1 cake stand with dome because you can keep it on the counter for your room-temp safe treats and use it for things like chips and dip, trifles, veggie platters and so on!
