This summer, I had the pleasure of picking white peaches at Eastmont Orchards in Colts Neck, NJ, and let me tell you, they were the best peaches I've ever had in my life! The sweetness, the juiciness, and that perfect balance of tartness made every bite a true delight.
One of the best parts? I was able to eat half and freeze half of the peaches I picked to preserve their ripeness and to enjoy their incredible flavor when I was ready. They freeze beautifully, maintaining their texture and taste, making them the perfect choice for this cobbler recipe—and countless other dishes too. Here’s how to make your own delicious peach cobbler, using those sweet white peaches you’ve frozen from your summer haul.
The Recipe
1 stick (1/2 cup) melted butter
1 cup flour
1 cup sugar
1 cup milk
2 cups of fresh sliced peaches, dusted in flour
1 teaspoon baking powder
Preheat your oven to 350°F
Pour melted butter into a baking dish, ensuring it evenly coats the bottom. I used a dutch oven in the photo, but I also use my CorningWare*, so I can cool completely, then store it with the matching lid!
In a mixing bowl, combine the flour, sugar, baking powder, and milk. Stir until the ingredients are just combined. I use my Pyrex mixing bowl set*, also with matching lids!
Pour the batter over the melted butter in the baking dish. Do not stir the mixture.
Place flour dusted, sliced peaches evenly on top of the batter.
Bake for about 30 minutes, or until the top is golden brown and the edges are slightly crispy.
Enjoy it warm, cool slightly before serving. Add a scoop of vanilla ice cream, Greek yogurt or a dollop of whipped cream.
