Coconut Macaroons with Mix-in's

Image
Ingredients 1 14oz bag of shredded coconut 1 14oz can of sweetened condensed milk 1/2 bag of semi-sweet chocolate morsels Preface Somehow I have developed a coconut addiction, and with my food allergies I am really limited to store-bought candy and GOOD cookies. I really got hooked on these for their texture, sweetness, simplicity, and quite honestly, lack of ingredients. Plus it makes the house smell AMAZING. These are a great option if you or someone you know is gluten free as well. Just check your labels to be sure there are no gluten or wheat claims or derivatives. Let's Make it: Preheat your oven to 350°F and line a large cookie sheet with parchment paper. Combine the coconut, morsels and sweetened condensed milk in a medium bowl. Mix with a spoon until the coconut and milk are completely mixed, the mixture will be very sticky but you don't want it too wet. Scoop the mixture (about 2tbs worth) and place on your cookie sheet into rounded mounds, about 1 inch apart, t...

Egg-Free Oatmeal Chocolate Chip Cookies πŸͺ

Image
Egg prices have skyrocketed recently, and with the added concerns around bird flu and egg allergens, many people are opting for egg alternatives. Whether you're trying to stretch your dollar or avoid the health risks associated with eggs at the moment, it’s always a great idea to find a substitute that still gives you the taste and texture you love. Enter Greek yogurt! For this oatmeal chocolate chip cookie recipe, I’ve swapped 1 egg for 1/4 cup of whole-fat (or 5%) plain Greek yogurt. Not only does it not impact the flavor, but it also keeps the cookies fresher-tasting ... soft and chewy on the inside with crispy edges much longer than baking with eggs. Perfect for those who want to skip the eggs without compromising on taste! These cookies are made with a scoop that creates golf-ball-sized dough balls, so they bake up to a perfect size that fills the palm of your hand. They're easy to decorate for the holidays, too—making them a festive and delicious treat to share. Absolutel...

Easy and Delicious Homemade Peach Cobbler πŸ‘

Easy and Delicious Homemade Peach Cobbler: A Sweet Taste of Summer, Anytime. There's nothing quite like the warmth and comfort of a homemade peach cobbler, especially when it's made with the juiciest, most flavorful peaches you've ever tasted. This summer, I had the pleasure of picking white peaches at Eastmont Orchards in Colts Neck, NJ, and let me tell you, they were the best peaches I've ever had in my life! The sweetness, the juiciness, and that perfect balance of tartness made every bite a true delight. One of the best parts? I was able to eat half and freeze half of the peaches I picked to preserve their ripeness and to enjoy their incredible flavor when I was ready. They freeze beautifully, maintaining their texture and taste, making them the perfect choice for this cobbler recipe—and countless other dishes too. Whether you're using them in smoothies, salads, pies, or savory sauces, these peaches bring an unmatched punch of flavor to whatever you make. Why P...
